meatballs-2

Today is National Meatball Day (in America)! So we’ve decided to put together a recipe for delicious meatballs you could make with your children. We’re not sure how National Meatball Day started but who can resist tasty meatballs.

Ingredients

For the meatballs

  • 200g beef mince
  • 200g pork mince
  • 1 finely chopped garlic clove
  • ½ tsp dried mixed herbs
  • 1 tbsp olive oil
  • salt and pepper (to season)

If you don’t eat pork you can substitute this for 200g of beef instead.

For the sauce

  • 1 diced onion
  • 1 finely chopped garlic clove
  • 1 tsp dried mixed herbs
  • 1 x 400g tin tomatoes
  • 500ml vegetable or beef stock
  • 400g dried spaghetti
  • 1 tbsp olive oil
  • salt and pepper

Don’t forget a couple of portions of pasta or spaghetti. Spaghetti is definitely for those feeling brave and don’t mind a bit of slurpy mess.

The messy part – cooking!

  1. Start by making the sauce. Brown the diced onion in a large saucepan over medium heat. This should take around 4-5 minutes.
  2. Add the garlic to the saucepan and cook for a further 2 minutes.
  3. Add the dried herbs, tomatoes and stock. Once this is simmering reduce the heat so it’s simmering very gently.
  4. Whilst the sauce is simmering we can make the meatballs. Mix together the pork mince, beef mince, garlic, herbs and salt and pepper. /you should be able to make roughly 20 balls with your hands.
  5. To cook place the meatballs, in a frying pan over medium heat and add the olive oil. Once hot add the meatballs until they’re nicely coloured all over.
  6. Scoop out the meatballs and add them to the sauce and simmer for 10 minutes.
  7. Heat a frying pan over medium heat and add the olive oil. Once hot, fry the meatballs on all sides until nicely coloured, being careful not to burn them. You may need to do this in batches. Transfer to the saucepan holding the sauce.
  8. Continue to simmer the sauce for 10 minutes while you cook the spaghetti/pasta according to its packet instructions.
  9. Once the pasta is cooked stir it into the sauce and serve!

Like our picture, you could add little slithers of veggies to make little faces on the meatballs, extra exciting!
